Roles and responsibilities include: 

• Curating and ongoing development of cocktail menu

• Ensure compliance and RSA standards are maintained

• Daily operation of Venue including opening and closing reporting and cash up procedures 

• Oversee customer service throughout peak trade

• Recruitment, induction and training of staff 

• Create and implement staff incentives

• Implement and maintain customer service standards in all bars

• Manage the cellar, ordering of stock and conducting monthly stocktake 

• Manage stock take variances and implement control systems

• Wages, forecasting and controls of wage costs and percentage
