We are seeking a dynamic and experienced hospitality leader with exceptional management, operational and guest service expertise to join our team as Director of Food & Beverage.

The Hotel Windsor is one of Australia's most iconic luxury hotels, renowned for its timeless elegance and rich heritage. Established in 1883 and located on Spring Street at Melbourne's prestigious Bourke Hill, the hotel embodies the grandeur of a European-style Grand Hotel, seamlessly blending Victorian-era architecture with contemporary hospitality.

Our Food & Beverage division encompasses a diverse portfolio of outlets and event spaces, delivering memorable experiences across corporate functions, conferences, gala events, weddings and social celebrations. The department is also home to the hotel's celebrated Afternoon Tea service in One Eleven Restaurant, Cricketers Bar and the Grand Ballroom, all of which are integral to The Hotel Windsor's enduring reputation for excellence.

The Opportunity:

The Director of Food & Beverage is responsible for providing strategic leadership, commercial direction and operational oversight across all Food & Beverage operations within The Hotel. The role is accountable for driving financial performance, enhancing guest experiences, maintaining operational excellence, leading high-performing teams and supporting the long-term growth and success of each outlet.

Responsible for maximising profitability, elevating service standards and driving sustainable business performance, you will develop and mentor department leaders, foster a culture of accountability and continuous improvement, and ensure brand standards, compliance requirements and operational objectives are consistently achieved.

Working closely with the Managing Director, Executive Leadership Team, Department Leaders and key stakeholders across the Group, you will lead strategic initiatives that deliver budgeted outcomes, strengthen market positioning, enhance guest satisfaction and support the continued growth of The Hotel Windsor’s Food & Beverage operations, while contributing to broader business strategies that drive innovation and long-term success.

Key Responsibilities:

• Drive revenue growth, profitability and overall Food & Beverage performance across all outlets.
• Lead, develop and inspire a high-performing management team, fostering engagement, accountability and continuous improvement.
• Deliver exceptional guest experiences while maintaining premium service standards and brand consistency.
• Identify and implement new business opportunities, partnerships and events to enhance revenue and market presence.
• Oversee financial performance, including budgeting, forecasting, labour management, cost control and operational expenses.
• Ensure compliance with food safety, occupational health and safety, licensing requirements and company standards.
• Collaborate with Sales & Events, Kitchen and Beverage teams to maximise outlet utilisation and operational excellence.
• Monitor operational performance, inventory, business KPIs and improvement strategies to enhance productivity and profitability.

• Extensive senior leadership experience managing Food & Beverage operations within premium hospitality environments.
• Demonstrated success leading multi-outlet operations, driving consistency, quality and operational excellence.
• Proven financial management capability, including budgeting, forecasting, labour management, cost control and inventory optimisation.
• A hands-on leadership approach with the ability to coach, develop and inspire high-performing teams while fostering a positive workplace culture.
• Strong knowledge of food safety, liquor licensing, workplace health and safety, and compliance requirements.
• Exceptional communication and stakeholder management skills, with the ability to build strong relationships across teams, suppliers and senior leadership.
• A strategic and innovative mindset, with the ability to identify opportunities, enhance guest experiences, improve efficiency and drive continuous improvement.
• Highly organised, adaptable and resilient, with the ability to manage competing priorities across multiple outlets in a fast-paced environment.
