We are currently seeking a talented and passionate Head Chef to lead our kitchen into an exciting new chapter. This is an excellent opportunity for an experienced Head Chef—or a highly skilled Senior Sous Chef ready to take the next step in their career.

About the role:

· Manage day-to-day operations of the kitchen and lead a small team

· Planning of menus, estimating food & labour cost, ordering, closely monitoring and controlling COGS.

· Recruit all kitchen staff

· Roster team members while interpreting and acting upon financial information.

· Develop external relationships with appropriate suppliers.

· Analyse competitors & market trends while providing constant & consistent development of the menu.

· Have extraordinary culinary flair and a motivating leadership style to support your team.

· Ensure high quality and presentation of food provided to guests, according to property standards and timeframes of service

· Maintain a safe clean and organised work environment with emphasis on high food safety standards

What we are looking for:

· Previous experience in a Head or Senior Sous Chef role

· Someone with a confident, modern, and creative cooking style with a strong emphasis on quality and presentation

· A strong understanding of food cost and control

· Certificate IV in Commercial Cookery or equivalent trade qualification - Essential

· Current Food Safety Supervisor Certificate

· Experience in month-end stock take

· A flexible approach in adapting to guest requests.

· Great communication skills and ability to develop and motivate a team.

· Proven experience managing kitchen teams of 5+ staff members in a fast-paced environment

· Good time management skills and the ability to work well under pressure.

· Flexibility to work some split shifts or weekends as required.

· Australian citizenship, permanent residency, or valid work visa
