Restaurant Manager

Lua by Luke Nguyen at Sydney Fish Market is looking for an experienced Restaurant Manager to help lead our team. If you're a hands-on leader with a passion for exceptional hospitality, team development and delivering outstanding guest experiences, we'd love to hear from you.

Your Responsibilities

• Lead restaurant operations to ensure exceptional end-to-end guest experiences.
• Oversee day-to-day service and drive strategic operational excellence.
• Recruit, train, mentor and inspire a high-performing operations team.
• Support and develop proposals for activations and non-event-based initiatives.
• Build strong relationships with internal departments and external partners.
• Manage labour and restaurant forecasting, rosters and operational budgets.
• Champion Lua’s culture, service philosophy and commitment to excellence.

What are we looking for?

A natural leader ready to step into a career-defining role within a growing, future-focused hospitality group. You thrive in a hands-on environment, embrace process improvement and love representing restaurant leadership directly to guests.

You will bring:

• Minimum 3 years’ management experience in a similar role (Restaurant Manager, Operations Manager, Assistant Manager or Senior Operations).
• Strong leadership qualities – organised, flexible, a great coach and communicator.
• A genuine love of hospitality, dining trends, service delivery and team development.
• Proven success building, training and motivating service teams.
• Excellent communication, presentation and interpersonal skills.
• Exposure to budgeting and financial controls.
• A results-driven mindset with a “hands-on”, can-do attitude.
