Lutheran Aged Care - Overview
Lutheran Aged Care (LAC) Albury is a significant service organisation providing a range of aged care services across a number of facilities and the community, designed to meet customer needs. LAC is an independently run, not for Profit Company primarily funded by the Commonwealth Government. The organisation has a business structure incorporating the Lutheran Church of Australia (NSW district), the Board of Governance and Managing Director. The services that are part of this structure are Dellacourt Residential Aged Care facility, Yallaroo Residential Aged Care facility, Community Services, Emily Gardens Residential Aged Care facility, Nicholson Park and Pemberton View Independent Living Villages, Administration & Finance, Hotel Services, Property & Maintenance, Quality and Staff Development, Human Resources Management and Support Services (including pastoral care and volunteer coordination). LAC employs approximately 300 staff (including casuals) comprising nursing, personal care, maintenance, management and administrative staff.
The Role:
As part of the food services team you are required to assist with facilitating a high quality, cost effective food and beverage service to all customers of Lutheran Aged Care in accordance with dietary, statutory and best practice guidelines.
Position Objectives:
Under the direction and supervision of the Hotel Services Manager you are to demonstrate leadership and coordination through utilisation the Food Management System (Netmenu) and associated functionality to provide a:
High quality standard of food and beverage service that enhances resident lifestyle and encourages residents’ participation and appetite.

Commitment to the Quality program including documentation, utilisation, auditing, continuous improvement and risk management activities.
Commitment to the Work Health &Safety program including consultation, risk management and injury management activities as set out in Lutheran Aged Care’s quality and other documentation.

Trade Qualified Commercial Cook or Chef

High level of oral and written skills.

Key Accountabilities
Information Handling
Coordinate ordering and menu development as directed by Hotel Services Manager through the utilisation of the relevant Food Management Software (currently NetMenu).
To monitor quantity and quality of items such as crockery, cutlery and linen and forward orders to manager as required.
To maintain all documentation as requested by senior staff
Maintain privacy and confidentiality principles as set out in Lutheran Aged Care’s documentation.
Communication
Coordinate and direct the work of staff involved with the preparation and delivery of food.
Schedule work programs
Communicate expressed and observed meal preferences of residents to facility manager, in charge person, chef or cooks.
Act on information received from facilities in relation to change in orders, comments and complaints forms and other matters when required.
Communicate to external and internal customers in a professional manner.
To liaise with and be accountable to executive staff at Emily Gardens and within the organization.
Enterprise
Assist in the planning and review of menus in collaboration with the Food Services Manager, Directors, Dietitian and clients.
Organise own work schedules and delegate as appropriate.
Responsible for the planning, cooking ,ordering and preparing of all meals
Monitor food wastage/quantities and make appropriate changes to menus.
Assist Food Services Manager in the planning and delivery of food and beverages services for special functions and external services as required.
Supervise the food services staff and department in the absence of the Food Services Manager or as required within LAC.
Participate in other kitchen duties as deemed necessary.
Organisational
Organise/coordinate the daily production of all meals to meet individual requirements of customers in a timely manner.
Coordinate food preparation for the following day.
Ensure stock holding and turnover are appropriate to meet the workload of the kitchen.
Receive and distribute delivery of goods according to the facility procedures.
Maintain all cleaning programmes according to facility procedures
Technology
Ensure all equipment is cleaned and maintained in a ready condition as set out in schedules.
Make suggestions on efficiency improvements to the manager when appropriate.
Team
Work with the Food Services Manager, Facility Managers in developing positive team culture and staff morale within the department.
Provide support to staff through supervision, encouragement and motivation.
Financial
Ensure that all purchases represent best use of financial resources, working within budgetary guidelines to meet nutritional requirements.
Assist the Food Services Manager in the delivery of a cost effective service to meet financial targets.
Training
Participate in ongoing professional development and education programs.
Contribute to the training of Food Services staff in the safe operation of equipment and procedures and work practices.
Encourage and support Food Services staff in ongoing training.
