Sous Chefs - Busy City Pubs - Full Time

We are looking for experienced Sous Chefs to join the kitchen teams at some of our busy, upmarket Sydney pubs.

These are hands-on roles for strong Sous Chefs who thrive in a fast-paced kitchen, take pride in consistently delivering quality food and can confidently lead the brigade in the Head Chef’s absence.

Working closely with the Head Chef, you will:

• Lead the kitchen and brigade during service and in the Head Chef’s absence

• Deliver consistently high standards across busy à la carte and function service

• Manage preparation, service and kitchen workflow according to business demand

• Assist with menu development, recipe costing, ordering and supplier management

• Assist with stocktakes, food cost control and minimising waste

• Train, mentor and supervise kitchen staff

• Maintain excellent food safety, hygiene and WHS standards

• Work closely with the Head Chef and venue management team

You will have:

• A minimum 2 years’ experience as a Sous Chef, in quality pub environments

• Commercial cookery qualifications

• Strong à la carte and high-volume service experience

• The ability to confidently manage a kitchen brigade

• Strong skills across both preparation and service

• An understanding of recipe costing, stock control and COGS

• Excellent organisation, communication and time-management skills

• Current food safety certification

• A professional, reliable and accountable approach

• Availability to work a rotating roster across days, nights and weekends

• Full Australian working rights
