Sous Chef - The Waratah (Award-winning Pub)

The Waratah is a modern Australian pub and bar celebrating everything that makes Australian hospitality great - warm service, a lively atmosphere, and a serious drinks list without taking itself too seriously.

Since opening, The Waratah has become one of Sydney's most recognised hospitality venues, recently awarded Pub of the Year at the 2025 Australian Bar Awards and featured in World's 50 Best Discovery, highlighting it as a destination venue for both locals and the global hospitality community.

We’re looking for an experienced and driven full-time Sous Chef to join The Waratah.

Working closely with the Head Chef, you’ll play a key role in the day-to-day running of the kitchen, helping lead service, maintain high standards and ensure the team is set up for success.

• Support the Head Chef in the day-to-day running of the kitchen

• Lead and coordinate the kitchen team during busy services

• Run the pass when required, maintaining consistency, quality and presentation

• Take ownership of prep, sections and service readiness

• Assist with ordering, stock control, rostering, wastage and cost management

• Train, support and mentor junior members of the kitchen team

• Maintain high standards of food safety, hygiene and kitchen organisation

• Take ownership of the kitchen in the Head Chef’s absence
