About the role

We are seeking a skilled and passionate Japanese Cook to join our dynamic kitchen team. Our restaurant accommodates 60 seats, offering an intimate yet fast-paced dining experience. You will be responsible for preparing high-quality, authentic Japanese dishes, ensuring consistency, speed, and exceptional presentation.

Key responsibilities

• Prepare ingredients for the sushi bar, hot kitchen, and tempura stations daily

• Execute traditional Japanese cooking techniques including grilling (Yakimitori/Robata), frying (Tempura), and simmering

• Ensure all dishes meet restaurant standards for traditional Japanese aesthetic presentation

• Maintain clean, sanitized, and organized work stations throughout service

• Monitor stock levels, rotate ingredients using FIFO, and minimize food waste

• Communicate effectively with front-of-house staff to ensure smooth service for our 60 guests

• Adhere strictly to local food health and safety regulations

About you

• Minimum 1 year of experience cooking in a commercial Japanese kitchen

• Proven proficiency in Japanese knife skills (Hōchōjutsu) and cooking methods

• Ability to work quickly and accurately during high-volume peak dinner rushes

• Capability to stand for long periods and work in a high-temperature environment

• Strong cooperative mindset to work alongside sushi chefs and kitchen hands

• Availability to work nights, weekends, and public holidays

• Trade certificate (preferred)

• Valid food handler's safety certificate (preferred)
