Assistant Manager & Bar Manger – Fish Lane

Clarence Restaurant | Fish Lane, Brisbane

We’re looking for an experienced Assistant Manager / Bar Manager to join the team at Clarence.

This is a hands-on role for someone who genuinely enjoys being on the floor, understands good hospitality and wants to take ownership of the day-to-day running of a busy restaurant.

Working closely with our Restaurant Manager, you’ll help lead the FOH team while taking particular responsibility for the bar, cocktails and beverage service.

Your key responsibilities will include:

• Leading the FOH team through service and helping maintain a warm, professional and relaxed style of hospitality

• Running services and taking ownership of the restaurant in the Restaurant Manager’s absence

• Supporting, training and developing the FOH team

• Taking ownership of the bar and day-to-day beverage operations

• Maintaining and developing our cocktail offering

• Ensuring drinks are consistently prepared and presented to a high standard

• Managing bar ordering, stock levels, prep and organisation

• Working with management to maintain appropriate beverage COGS and minimise wastage

• Maintaining strong product knowledge across cocktails, spirits, beer and wine

• Working closely with our Restaurant Manager and Wine Manager on the broader beverage offering

• Managing bookings, sections and service flow

• Building relationships with regulars and ensuring guests are genuinely looked after

• Supporting opening and closing procedures, cash-up and daily reporting

• Maintaining RSA, liquor licensing and FOH compliance standards

• Helping create a positive, professional and accountable team culture

• Working closely with the kitchen and management team to continually improve the restaurant

We’re looking for someone who:

• Has previous restaurant management or senior supervisory experience

• Has strong bar and cocktail knowledge

• Is confident leading a busy restaurant service

• Is organised, reliable and comfortable taking responsibility

• Enjoys training and developing younger team members

• Has a genuine interest in food, wine and hospitality

• Understands that great service can be knowledgeable and professional without being formal

• Wants to be part of a small, ambitious restaurant team and grow with the business

This would suit someone currently working as an Assistant Manager, Bar Manager or experienced Supervisor looking for greater responsibility.
