Good Food Gourmet Pty Ltd T/As Sumeshiya Japanese Restaurant located at Manning/Como WA 6152 is looking for a full-time Chef/Cook to join our team on a full-time basis. The position is available for an immediate start.

Some of the duties and responsibilities are:

• Manage kitchen, according to the established concept of Sumeshiya Japanese Restaurant.
• Have a full working knowledge and capability to supervise, correct and demonstrate all duties and tasks in the kitchen to the standard set.
• Prepare and cook all menus at Sumeshiya Restaurant, and ensuring that the food taste meets Sumeshiya's recipes and standards.
• Able to adjust recipes without compromising taste to meet customers' specific requests, e.g. to cater for allergies.
• Monitor and ensuring quality of dishes at all stages of preparation and cooking.
• Ensuring high standards of presentation for all dishes served.
• Discussing food preparation with team members and owners.
• Plan menus, estimate food and labour costs to ensure all costs are controlled to ensure profits.
• Order food supplies - wherever possible, source locally and seasonally available products.
• Awareness of the available ingredients in the Kitchen at all times, ensuring efficiency in ingredients used in preparing each dish, so as to minimise waste.
• Conducts regular inventory check on all operating equipment and supplies.
• To ensure the par stocks for all operating equipment, supplies, inventoried items are strictly adhered to and that the kitchen is adequately equipped
• Ensure food are handled correctly, e.g. in freezing and preserving food.
• Diligently implement good hygiene practices at all times, in preparation of food, and also in work areas, as per the OH&S Regulations.
• Select and train staff, when required.

Skills / Experience / Specific Qualifications Required:

• Trade qualifications in Cookery preferred.
• Minimum of 1-2 years' experience in similar role.
• Able to work under pressure during busy periods.
• Experience in preparing Japanese cuisines (hot food) is essential.
• Experience in Japanese teppanyaki is highly regarded.
• Knowledge of seasonal food products and supplies are highly regarded.

A salary of $79,500 - $82,000 plus superannuation will be offered to the successful candidate.
