Key Responsibilities

• Prepare and cook Modern Australian dishes in accordance with Sage Yellowfin recipes, specifications and presentation standards.
• Work across seafood, grill and hot sections, including the preparation and cooking of fresh seafood, steaks, pasta and other menu items.
• Handle and prepare premium seafood products including oysters, prawns, scallops, Moreton Bay bugs, octopus and salmon.
• Operate grills and other commercial kitchen equipment safely and efficiently during service.
• Maintain consistent food quality, flavour, presentation and portion control across all dishes.
• Complete daily mise en place and ensure assigned sections are fully prepared for lunch and dinner service.
• Maintain high standards of food safety, hygiene, cleanliness and safe food-handling practices.
• Monitor stock levels, rotate ingredients correctly, minimise wastage and assist with inventory control.
• Work efficiently under pressure during high-volume service periods while maintaining menu consistency.
• Coordinate with other chefs, kitchen staff and front-of-house team members to ensure timely and smooth service.
• Assist with receiving, checking and correctly storing fresh produce, seafood and other kitchen supplies.
• Maintain a clean, organised and service-ready workstation throughout each shift.

Essential Requirements

• Minimum 1 - 2 years' experience as a Chef in a busy commercial kitchen
• Relevant Certificate IV in Commercial Cookery and Diploma of Hospitality or equivalent qualification preferred
• Knowledge of food safety and HACCP principles
• Ability to work efficiently in a fast-paced environment
• Strong teamwork and communication skills
• Availability to work evenings, weekends, and public holidays
